Dark Chocolate Brownies

This is one of my favorite dessert recipes. It’s quick, simple, and SO delicious. If you have never made brownies from scratch, you’re missing out on some yummy goodness. I adapted this recipe from an oldie via All Recipes. The “secret ingredients” really make the recipe, though! The coffee intensifies the already rich chocolate flavor.

Here’s what you’ll need:

1/2 cup butter

1 cup white sugar

2 eggs

1 teaspoon vanilla extract

2 tablespoons of very strong brewed coffee

1/3 cup unsweetened dark cocoa ( I use Hershey’s “Special Dark”)

1/2 cup all-purpose flour

1/4 teaspoon salt

1/4 teaspoon baking powder

Butter or spray a 9 x 9 pan. Microwave butter in a large bowl until completely melted. Mix in sugar. Mix in eggs, one at a time. Add vanilla and coffee. For the coffee, I put 2 tablespoons of water in a small glass and mix in a healthy spoonful of instant coffee – extra strong! Finally, dump in all of your dry ingredients and mix until just blended. Don’t overmix, as this can make baked goods too dense.

Bake on 350 for about 25 minutes.

These are the richest brownies! I love one with a shmear of peanut butter 🙂 The best part might just be that this recipes uses exactly one bowl and one fork to mix!
